Just For Fun: S'mores Krispie Treats

Here's a fun recipe treat for your post-holiday weekend Thursday: S'mores Krispie treats!

These guys are a hybrid of two favorite childhood summertime desserts: the Rice Krispie treat and the S'more. I knew I was making my frozen fruit pops for our barbecue, but I only had 6 molds (and more than 6 guests), so I needed to come up with a second dessert to serve-- and preferably one that was pretty low maintenance.

Despite how easy these were to make, they ended up being the stars of the show! A few of our guests even went back for seconds and thirds. The chocolate inside and on top of these treats makes them extra rich and the incorporation of the crushed graham crackers really gives it that s'more flavor.

I'm not sure if it's the altered ingredients here, but these stayed soft for much longer than the typical Rice Krispie treat does. I prepared them in a glass baking dish, allowed them to cool, and then snapped the lid on the dish. I didn't cut them until the day I served them, but the leftover treats were still good a day later. Success!



Ingredients:
  • 3 Tbs. salted butter
  • 1 10-oz. bag marshmallows
  • 5 cups Rice Krispies cereal
  • 1 cup low fat graham crackers, crushed into small pieces (but not ground into crumbs)
  • 1/3 cup semi-sweet chocolate chips
  • 2 Tbs. chocolate shavings (you could also use mini chocolate chips or chocolate sprinkles)
  • 2 Tbs. graham cracker crumbs

Grease a 9" x 13" baking dish with cooking spray and set aside.

Heat a large pot over medium low heat and add butter. Allow the butter to melt and then add marshmallows, stirring to combine until marshmallows are completely melted and incorporated into the butter.

Remove from heat and add Rice Krispies and crushed graham crackers to the pot. Stir until partially combined and then add chocolate chips, mixing until just combined.

Pour mixture into the greased baking dish and use your fingers to gently press and even out the mixture. Allow to cool for 5-10 minutes and then sprinkle graham cracker crumbs and chocolate shavings evenly over the top of the treats.

Cool completely and then cover until ready to slice into bars and serve.
