Fresh Homemade Dinners Made Easy with Madison & Rayne

I love to cook. Even on a busy weeknight after a long day at the office, I find it both comforting and a little therapeutic to make a homemade dinner in my kitchen. On some of these nights when I arrive home feeling a little burned out though, I find it really difficult to be creative in the kitchen. First up was a pappardelle pasta in a blue cheese cream sauce with chicken, bacon, escarole, dates, and walnuts. This salty and sweet combination of ingredients along with one of my favorite pasta shapes was right up my alley-- and it came together in only 20 minutes!

For our second dinner, we enjoyed a roasted pork tenderloin over creamy spinach with sweet potatoes, corn, mushrooms, and blueberries. The pork tenderloin was well trimmed and fresh. And I absolutely loved this veggie combination! The blueberries really completed the whole thing and gave it such a sweet and summery flavor.
