What's For Dinner Wednesday: Spicy Guacamole Grilled Cheese Sandwiches

We are in the midst of moving and let me tell you, I'd like this to be our last one for a while. And seeing as we bought the place, I'm thinking it will be!


The past couple of weeks (and the next few) have been full of cleaning, packing, painting, trips to Home Depot, Craigslist furniture pick ups, and all sorts of moving-related tasks. Needless to say, the more thoughtful dinners that I like to prepare have taken a backseat to pizza delivery and takeout salads that we can eat on the fly. I have been doing my best to cook as many meals for us as I can, but that's gotten tricky since we sold the kitchen island at our current place (which was my main kitchen work surface!) and since we've been running back and forth to the new condo. These dinners need to be quick and easy to prepare and many of them also need to be easy to pack and reheat (or need no reheating at all) so that we can pack and eat them at the new place where we don't have a fully stocked kitchen yet.


Whew.


So, tonight's What's for Dinner Wednesday recipe totally fits the bill for a quick, easy, and also satisfying dinner. These grilled cheese sandwiches are packed with flavor-- a little sweet and a little spicy, but also super filling. I love the addition of avocado to this sandwich. It's super rich, but also relatively good for you. I added Serrano ham here, but you could easily sub in bacon or grilled chicken or leave the meat out completely and make it vegetarian too.


Ingredients:

  • 2 Tbs. butter
  • 4 slices sourdough bread *Get it fresh from a bakery (even in your grocery store), if you can!
  • 1 avocado
  • 1 tsp. fresh lime juice
  • Salt and pepper, to taste
  • 4 slices of pepper jack cheese
  • 4 slices of Serrano ham
  • 1 medium tomato, thinly sliced

Spread butter equally on the outside of each of the 4 slices of bread.

In a small bowl, mash the avocado with a fork or masher until smooth. Stir in lime juice and season to taste with salt and pepper. Spread this avocado mixture on the inside of each of the four slices of bread. Note: You do not necessarily have to use all of the guacamole here-- just your desired amount.

On one slice of bread (buttered side out), layer 1 slice of cheese, half the Serrano ham, and a few tomato slices. Top with the second slice of cheese and the second slice of bread with the buttered side facing out. Repeat with second sandwich.

Place both sandwiches carefully in the hot skillet and cover. Cook for about 4 minutes or until cheese begins to melt and the bottom side is golden brown. Gently flip the sandwich over, cover again, and cook for another 2-3 minutes until golden.

Remove from skillet, allow to cool for 1-2 minutes, slice, and serve warm.
