What's For Dinner Wednesday: Marinated & Grilled Squash

I know that the end of summer is quickly approaching unless you consider that to be Labor Day and in that case, adios summer! I couldn't resist sneaking in one more good grill recipe though... and let's get real, we love to grill in those house so you may likely see a few more over the next few weeks.

This veggie side dish is super easy, healthy, and is my take on one that my mom used to make at home in the summertime. Zucchini and squash are cut into thick slices, marinated in a vinaigrette, and then grilled. The veggies take on the most amazing flavor after this process and are the perfect accompaniment to any simply grilled protein. Mom used to make a batch of Good Seasons Italian dressing and marinate her squash in that. I like to use a vinegar, oil, and honey combination and then season with my own dry herb combinations. You can get creative with it, but I have share my favorite for you here...



Ingredients:
  • 1 medium yellow summer squash
  • 1 medium zucchini
  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbs. honey
  • 1/2 tsp. Kosher salt
  • 1/4 tsp. ground black pepper
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/2 tsp. dry basil leaves
  • 1 tsp. dry parsley leaves
  • 1 tsp. dry chives

Wash, dry, and cut ends off of each squash. Slice each squash lengthwise about 1/4-inch thick. Place squash slices in a large zip-locking plastic bag.

Whisk together olive oil and next 9 ingredients through chives. Pour evenly over squash and zip lock the bag tightly, squeezing out excess air. Refrigerate for at least 2-3 hours.

Preheat grill to medium heat. Oil grates and gently place slices on the grill. Grill until squash is softened and grill marks appear, a few minutes. Flip the squash slices and grill for another few minutes until grill marks are visible on both sides. Remove and serve warm.
