An April Weekend: Snapshots

Happy Monday!

Hope you all had a great weekend!  I'm a little later than usual with today's post-- probably because I was so enraptured by the two-hour premier of Mad Men last night (yaaaay!) that I couldn't concentrate on anything else.

It was so nice to be out and about in the spring sunshine this weekend-- especially since there is snow in the forecast for this week. That's right, Chicago. April snow. Just what you wanted to hear.

I finally had some energy this weekend and after several "lost" days being sick over the past month, I was feeling like I had lots to get done.

We ran a ton of errands and I picked up this adorable new kitchen rug from Target-- less than $30. What a steal! I spend a lot of time in my kitchen (obviously) and the hardwood floors are hard on my feet so I've been on the lookout for something soft and cute to keep under my feet. I'm thinking this was a perfect addition to the kitchen.



We also stopped by NYC Bagel Deli for lunch during our Saturday errand spree. I LOVE bagels and I love tuna salad, even though both are so bad for you. FYI, NYCBD serves lite tuna salad and whole wheat bagels. This lunch made me really happy.


On Saturday evening we ventured up to Wicker Park to celebrate our friend Mere's birthday. We celebrated with a Mexican dinner at Las Palmas (will share more with you on that meal later) where she was serenaded by the house guitarist and then we headed off for drinks at FatPour Tap Works. It was so warm that evening that we actually sat out on the patio at FatPour... until it started raining.



By the way, today is her actual birthday. Happy birthday, Mere!

I was also in the mood for some spring cleaning this weekend and decided it was time to pack up the Easter decor and purge the unwanted candy. We always have Peeps at Easter, but never actually eat them. Instead of throwing them away, I decided to make some Peeps Krispie Treats instead. You can find the recipe here.



And finally on Sunday, I cleaned the apartment and roasted a chicken for our better late than never Easter dinner. Stay tuned to this week's posts for recipe updates!
